Banana Crumb Muffins

Ingredients:
1 1/2 cups flour
3/4 cup white sugar
1/3 cup packed brown sugar
1 teaspoon baking soda
1 teaspoon baking powder
3 bananas, mashed
1 egg, lightly beaten
1/3 cup butter, melted
1/8 teaspoon ground cinnamon
2 tablespoons flour
1 tablespoon butter
1/2 teaspoon salt

How to Cook

Preheat oven to 190 degrees C. Grease lightly 10 muffin cups with butter. You may also line with muffin papers with the cups.
Now take a large bowl. Mix together 1 1/2 cups flour, baking soda, baking powder and salt.
Take another bowl and put together bananas, sugar, egg and melted butter. Beat well. Stir the banana mixture into the flour mixture and make a fine batter.
Now take a spoon and start pouring the batter in the muffin cups. Set it aside.
Now take a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Add a tablespoon full of butter and keep beating until the sugar is melted. Put this on the top of the muffins.

Bake in the oven for 18 to 20 minutes. Check if it is baked by inserting a toothpick into the center of a muffin. If it comes out clean your muffins are ready else you have to bake it for another 2 to 3 min.

Chicken Liver Terrine

Ingredients:
1 1/2 lb chicken livers
A pot of Milk
1 teaspoon salt
1/2 teaspoon ground white pepper
1 1/2 cups heavy cream
1 egg
2 fresh thyme sprigs
2 bay leaves
Toasted baguette slices or crackers (savory biscuits)

How to Cook

Add milk to the chicken livers and put it in an air tight container. Refrigerate it over night.
Before cooking preheat the oven to 375 degrees F.
Drain the milk out of the chicken livers and put it in a blender.
Add the salt, white pepper, cream and egg in the blender. Blend on high speed until it becomes a thick smooth paste.
Take a sieve and strain the liver paste into a bowl, to remove any fibrous matter. Then again strain it into a 9 and half-by-3 and half-by-3 and half-inch terrine. Lay the fresh thyme sprigs and the bay leaves on top for garnishing.
You can either cover the terrine with a lid or an aluminum foil. Place it in a baking pan and pour warm water in the pan so that it reaches halfway up the sides of the terrine. Bake it for about 45 minutes. Check with a knife by inserting it into the center. If it comes out clean then your Chicken Liver Terrine is ready.
Once cooked remove the baking pan from the oven first and then remove the terrine from the baking pan. Remove the cover and let cool.  Once it comes to a room temperature cover the lid and refrigerate it overnight.
Cut into small slices and serve either chilled or at room temperature with toasts or crackers.

Amish White Bread

Ingredients
2 cups warm water
2/3 cup white sugar
1 1/2 tablespoons active dry yeast
1 1/2 teaspoons salt
1/4 cup vegetable oil
6 cups bread flour

How to Cook

In a large bowl, put the sugar and add warm water. Keep stirring it until the sugar is melt.
Add yeast and stir to blend well into creamy foam.
Add salt and oil into the mixture.
Add the flour to it, one cup at a time, and keep blending.
Keep kneading until it becomes smooth dough.
Coat the dough with oil and cover with a wet cloth.
Keep for an hour and allow rising until doubled in bulk.
Knead the dough again for a few minutes and divide in half.
Give shape of loaves, and place into two well oiled 9x5 inch loaf pans.
Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.

Bake at 350 degrees F (175 degrees C) for 30 minutes.
